Chewy Vegan Granola Bars



These homemade vegan granola bars are chewy and full of healthy ingredients. They're great for a quick snack or breakfast on the go.

Ingredients:

  • 2 cups rolled oats
  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 1/4 cup chopped almonds
  • 1/4 cup dried cranberries
  • 1/4 cup vegan chocolate chips
  • 1/4 cup shredded coconut
  • 1/4 teaspoon cinnamon
  • Pinch of salt

Instructions:

Preheat oven to 350F 175C

In a large bowl, mix together rolled oats, almond butter, maple syrup, chopped almonds, dried cranberries, vegan chocolate chips, shredded coconut, cinnamon, and a pinch of salt until well combined

Press the mixture firmly into a parchment-lined 8x8-inch baking dish

Bake for 15-20 minutes until the edges are golden brown

Let it cool completely before cutting into bars

Store in an airtight container
