Vegan Almond Malt Cookies with Chocolate Drizzle

These vegan almond malt cookies are a tasty treat that taste a bit like nuts and are sweet from the malted barley syrup. With a rich chocolate drizzle on top, they're perfect for satisfying your sweet tooth.

Ingredients:

  • 1 cup almond flour
  • 1/4 cup malted barley syrup
  • 2 tbsp coconut oil, melted
  • 1/4 tsp almond extract
  • 1/4 tsp salt
  • 1/4 cup dairy-free chocolate chips
  • 1/2 tbsp coconut oil

Instructions:

Start by heating the oven to 350F 175C

Put parchment paper on the bottom of a baking sheet

Melted coconut oil, almond extract, salt, and malted barley syrup should all be mixed together in a bowl

Mix until you get a dough

You can make balls out of small pieces of dough

Put them on the baking sheet that has been prepared and press them down a little to make them flat

Put it in the oven for 10 to 12 minutes, or until the edges turn golden brown

Let the cookies cool for 5 minutes on the baking sheet before moving them to a wire rack to cool all the way

While the cookies cool, melt the coconut oil and dairy-free chocolate chips in a bowl that can go in the microwave for 30 seconds at a time until the mixture is smooth

Use a spoon or a piping bag to drizzle the melted chocolate over the cookies that have already cooled

Wait until the chocolate is set to serve it

Do not eat the chocolate drizzle on top of your vegan almond malt cookies
