Crunchy Pickle Potato Salad



The crunchy pickles and fresh dill in this vegan potato salad give it a lot of flavor and texture. It's a great side dish for any event, like a picnic or a barbecue.

Ingredients:

  • 6 medium potatoes, boiled and cubed
  • 1 cup diced crunchy pickles
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh dill
  • 1/4 cup vegan mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions:

In a large bowl, combine the boiled and cubed potatoes, diced pickles, diced red onion, and chopped fresh dill

In a small bowl, whisk together the vegan mayonnaise, Dijon mustard, and apple cider vinegar

Pour the dressing over the potato mixture and gently toss until everything is well coated

Season with salt and pepper to taste

Refrigerate for at least 30 minutes before serving to allow the flavors to meld together
