Quinoa, Beet, and Chickpea Burgers



These Quinoa, Beet, and Chickpea Burgers are a tasty and healthy alternative to traditional burgers. Packed with protein, fiber, and vibrant flavors, they are perfect for a satisfying meal.

Ingredients:

  • 1 cup cooked quinoa
  • 1 cup grated beets
  • 1 can 15 oz chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup tahini
  • 1 tablespoon olive oil
  • 4 whole wheat burger buns
  • Toppings: lettuce, tomato, avocado slices

Instructions:

In a food processor, combine chickpeas, beets, and quinoa

Pulse until well combined but not completely smooth

Transfer the mixture to a bowl and add breadcrumbs, red onion, garlic, cumin, smoked paprika, salt, pepper, and cilantro

Mix until everything is evenly distributed

Divide the mixture into 4 portions and shape them into burger patties

In a skillet, heat olive oil over medium heat

Cook the patties for 4-5 minutes on each side or until golden brown and cooked through

Toast the burger buns in the skillet for 1-2 minutes or until lightly browned

Spread tahini on the bottom half of each bun, place a burger patty on top, and add your favorite toppings

Place the top half of the bun on top and secure the burgers with toothpicks if needed

Serve the quinoa, beet, and chickpea burgers with a side of salad or sweet potato fries
