Chickpea Minestrone
A hearty and nutritious chickpea minestrone soup with a variety of vegetables and pasta. This soup is a delicious and comforting meal for any occasion.
Ingredients:
- 1 can chickpeas, drained and rinsed
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced zucchini
- 1 cup chopped tomatoes
- 1/2 cup small pasta
- 4 cups vegetable broth
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- Grated Parmesan cheese for serving
Instructions:
In a large pot, heat olive oil over medium heat
Add minced garlic and saut until fragrant
Add carrots, celery, and zucchini
Cook until vegetables begin to soften
Stir in diced tomatoes, chickpeas, oregano, basil, salt, and pepper
Pour in vegetable broth and bring the soup to a boil
Add pasta and simmer until pasta is cooked al dente
Adjust seasoning if necessary
Serve hot, garnished with grated Parmesan cheese
